Easy-to-Make and Super-Delicious: Duck Poppers

Holy Delicious - this duck recipe is the bomb!

I learned how to make these this fall when I traveled to Saskatchewan for a women’s waterfowl hunt. If there is one thing that I always look forward to besides the hunt itself, it’s the food! And let me tell you, these did not disappoint.
Easy-to-Make and Super-Delicious: Duck Poppers

After several successful hunts in the field, we decided to make “duck poppers” for one of our meals. This is when Angie, our dear friend and amazingly kind-hearted host, taught me how to make her version of “duck poppers.” These can be made as the main course or as an appetizer.

Duck Poppers

 

We used fresh duck breasts that were not marinated, just seasoned with a little salt and pepper. If you want to add a little extra flavor, I would recommend marinating the duck with your favorite seasoning. 

 

INGREDIENTS:

  • Duck Breasts, tenderized 
  • Onion 
  • Cream Cheese
  • Jalapeños, chopped
  • Bacon 
  • Salt and pepper
  • Marmalade (optional) 

 

DIRECTIONS:

 

Using a meat tenderizer, work the duck breasts until they are wider and thinner. Preheat the oven (Traeger or regular grill) to 350 degrees. Cut the top and bottom of the onion off and then cut the onion in half vertically. Separate the onion layers from one another. 

 

Duck Poppers

 

Cut a slice of cream cheese and put it on the duck breast. Top the cream cheese with chopped jalapeño. Fold the duck so that the cream cheese and jalapeños stay in the middle. Next, take 2 onion halves and place them around the duck breast. Wrap each onion with 2 slices of bacon to make a nice neat ball. 

 

Place in the oven and cook for 15 minutes or until meat is cooked to your liking. If you are feeling extra wild, brush the balls with marmalade before placing in the oven and half way through the cook time. 

 

Side note: Since not everyone has access to wild game year round you can also substitute the duck with ground meat, just season with salt, pepper, and garlic then roll it into a ball. Case it with onion and wrap with bacon (dd cheese in the middle for something extra delicious.)
